Ube Colada

A purple ube twist on the piña colada.

Ube turns the colada a deep violet and gives the coconut and Ron Diaz light rum an earthy, vanilla sweetness the classic never had. Lime keeps it from going too rich. It is the drink guests photograph before they taste it, and then order again.
